They are part of our diet, important energy supplies for the body – with albumen (proteins) and fats, carbohydrates belong to the main nutrient groups in our diet. Carbohydrates serve as energy suppliers in the form of glucose. To split the disaccharide or polysaccharide into the monosaccharide glucose, the body uses various enzymes during digestion. Depending on the number of molecules in a carbohydrate, the longer it the time it takes for the energy to be available to the body.
