Spelt is a type of grain and a close relative of today’s wheat. There are many hybrid and transitional forms between “modern“ wheat and spelt, because in some regions both are grown together and were also crossed with each other. The cereal spelt is laborious to process and the backing process is challenging.

Recently spelt has experienced a certain renaissance, probably because it appeals to many allergy sufferers.
